If you are from Maharashtra then probably you have woken up every Sunday to the aroma of this wonderful breakfast dish!! It is an absolute favorite of me and my husband and there is rarely any week that has passed by, without us enjoying this dish! Its easy, quick, humble yet so tasty! I have seen people struggling to make a perfect plate of Poha and I thought why not share my recipe and help some of them out. Also, if you are not familiar with it, I highly recommend you try and enjoy it with your loved ones.
Ingredients:
Thick rice flakes - 2 whole cups
Onions chopped - 3/4 cup
Potato cubes, boiled - 1/2 cup
Roasted peanuts - 1/4 cup
Oil - 2 tb sp
Curry leaves - 2 sprigs
Lemon juice - 2 tb sp
Sugar - 1 t sp (optional)
Green chilies, chopped - as per taste
Cumin seeds - 1 t sp
Turmeric powder - 1/2 t sp
Asafoetida (hing) - 1/4 t sp
Salt - to taste
Coriander leaves, chopped - for garnish
Onions chopped - for garnish (optional)
Fresh coconut, scrapped - for garnish (optional)
Sev - for garnish (optional)
Method:
- Wash the rice flakes with water twice. Now take more water and soak all of it well for few seconds and drain 90 % of water out and set aside, covered. (It should soak atleast for 10 minutes)
- Heat oil in a wide pot. Add cumin seeds and allow to splutter.
- Add onions and saute for few minutes. Dont brown them or overcook them. Now add turmeric powder, hing, curry leaves, green chilies and saute for few seconds.
- Now add the cubed potatoes, peanuts, sugar and saute for a minute.
- Now add the rice flakes, salt and mix well.
- Finally, add the lemon juice, mix and serve hot with the garnishes.
Tips:
- I like to start with the soaking of the poha first and like to finish all my chopping and prep while the poha is soaking. This saves a lot of time.
Healthy Twist:
- Skip the sev, do not take the skin off of the potato and otherwise this is a wholesome and healthy dish as is. Just observe portion control.
