Lace Cookies



I had never heard of lace cookies before until I once bought them from Costco. I tasted these and it was literally love at first bite :P and I had to make them myself!! As opposed to our traditional chocolate chip or oatmeal ones, these are really light, thin and crispy. I love these especially because I love caramel and butterscotch and these taste very much like it. One of my most favorite things ever!!

Ingredients:

Heavy cream - 2 tbsp
Honey - 1/4 cup
Light brown sugar - 1/2 cup
Plain butter - 2 tbsp 

All purpose flour - 1/3 cup
Almonds (Lightly toasted and chopped) - 1/2 cup 
Pure vanilla extract - 1 tsp 
Baking Chocolate (preferably semi sweet) - 200g 


Method:

- Take a small non stick saucepan and add the cream, honey , sugar and butter and put on a medium flame
- Stir and allow the butter to melt and mix everything well.
- Now, let the mixture come to a boil after which, let the it cook at boiling point for 1 minute only.
- After a minute, take it off the stove and add the flour, almonds and vanilla and mix well.
- Now, take a baking sheet lined with parchment paper and place spoonful of the mixture separated by at least 2 inches (as these cookies spread a lot)
- Bake it in the oven for about 8 min while turning it once midway.
- When done, use a thin spatula to take them off the sheets and put them on a cold surface to allow them to cool.

While the cookies bake and cool, you can prepare the chocolate:
- Add the chocolate in a saucepan, add 2-4 tbsp of water and melt it.
- Now spread it on the cookies as desired and Enjoy!!

Tips:

- When you are working with the mixture, if you feel that it is getting too hard, you can set it back on the stove for sometime on very low flame to make it manageable.
- Be very attentive while baking these as they can get burnt very easily. All ovens are different so 8 minutes might be a bit less or a bit too much in your case.
- Although it works, try not to use aluminium foil instead of the parchment paper, as it will make the process harder.
- If you have a chocolate bar, then make sure you make smaller pieces of it before melting.
- Use you own favorite nuts instead of almonds.

Healthy twist:

- These cookies already use very little of the bad guys butter and sugar so when eaten in moderation you can have a guilt free trip to paradise!! :)
