Chicken Tiranga / Tricolor Kebabs (Indian Style Kebobs)


Hi Guys! Summer is here and BBQ is an order! I love kebabs so much and I always make this trio so that i can enjoy the full spectrum of flavors! This recipe will teach you how to make the Chicken Tikka, the Chicken Malai Kebab and the Hara Bhara Kebabs.. all so delicious and so pretty looking!!

Ingredients:

- Chicken Breasts - 3

Chicken Tikka Marinade:

- Turmeric powder 1/2 t sp
- 1 tb sp Ginger Garlic paste
- 1 t sp Kashmiri Red Chili powder
- Salt to taste
- 1 Tb sp oil
- 1/2 tb sp Coriander powder
- 1/2 tb sp Garam Masala powder
- 1 t sp Kasuri Methi Powder
- 1/4 th cup heavy cream or yogurt
- 1 tb sp Tandoori Masala powder

Chicken Malai Kebab Marinade:

- Processed cheese (mozarella cheese) 1/2 cup
- 1 tb sp Ginger Garlic paste
- 1/4th cup heavy cream
- Salt to taste
- powder of 2 cardamoms, 1 tb sp white pepper corns and a quarter nutmeg.

Chicken Hara Bhara Kebab Marinade:

- 1 bunch coriander leaves
- 1 tb sp Ginger Garlic paste
- green chilies to taste
- Salt to taste
- 1/2 cup mint leaves
- 1 tb sp oil
- 1 tb sp corn starch or roasted chickpea flour if the marinade is too runny.

Veggies:

- 1 large yellow bell pepper
- 1 large red bell pepper
- 1 large onion
- 1 lime
- salt to taste
- red chili powder (optional)

Method:

- Cut the chicken breast in cubes and divide in 3 parts.
- Marinate each part with the different colored marinade.
- Cut the veggies in cubes and mix with lime juice and seasoning.
- Let all of this sit in the refrigerator atleast for 30 minutes and it would be best if you keep it over night.
- Now, Preheat the oven at 350 F.
- Skewer all the chicken pieces on wooden or Stainless steel skewers alternating chicken and veggies.
- Spray some oil or apply melted butter on the chicken pieces and bake it in the oven for 12 - 14 minutes. (Turn them midway)

- Serve hot with some coriander and mint chutney, lemon wedges and onions.


Just out of the oven.. they smell so good!!

Tips:

- You can marinate the chicken in advance and keep it in the fridge for upto 5 days.
- Use Paneer or baby potatoes instead of chicken to make this a veggie tikka/kebabs
- If there is left over kebabs, cut them in smaller pieces and use them to make sandwhiches or wraps!
- You dont have to bake these, you can also bbq them on a grill or even on a simple pan (just cover and keep turning if using a pan)


Healthy Twist:

- Replace the heavy cream with yogurt.
- Replace butter with oil spray.
