Methi Mutter Malai (Fenugreek leaves and Green Peas in Creamy Sauce)




Methi mutter malai.. yes it is a mouthful to say the name of this dish but it is so mouth watering! This is one of the favorite dishes we love to order when we goto an Indian restaurant. What you don’t like methi? Then you must try this recipe. You will barely taste any bitterness and won’t even realize there is methi in the dish.. Enjoy! Ingredients:

For cashew paste:
- 1/4th cup cashews
- 1/4th of white onion
- 3-4 green chilies or to taste
- 5-6 cloves of garlic
- 1 inch piece of ginger

For the main dish:

- 1 bunch fenugreek leaves
- 1 cup green peas
- 1 cup chopped onions
- 1 cup pureed tomatoes
- 2 tb sp oil
- 3 tb sp butter for Vegan option, use veg oil or margarine.
- 1 t sp cumin seeds
- 1 t sp coriander powder
- salt to taste
- sugar to taste
- 1 cup heavy cream or for healthier option, 1/2 cup regular milk + 1/4th cup cream. For vegans, substitute with 1 cup of almond milk.

Method:

- We will begin by preparing our Cashew paste
- Make a smooth paste of the cashews, onion, green chilies, garlic and ginger with little water.
- Now in a pan take 1 tb sp of oil and add 2 tb sp of butter. When the butter is melted add 1 t sp of cumin seeds and let them crackle.
- After that lets add 1 cup of chopped onions and sauce them till they are translucent.
- Once the onions are cooked, lets add the cashew paste and saute till the paste starts leaving oil.
- Now add 1 cup tomato puree and cover and cook for 6-8 minutes. Set this aside.
- Meanwhile add 1 tb of oil and 1 tb sp of butter in another pan and add 1 cup green peas.
- Add 1 tsp coriander seeds and saute.
- Now add 1 bunch of chopped methi leaves and 1/4th cup of coriander leaves and saute till the fenugreek leaves are well cooked.
- Now add this to the tomato and cashew paste and mix well.
- Add salt and sugar to taste.
- Add 1 cup of heavy cream, mix and cover and cook for a minute or two.
- Serve hot with Naan or Roti.

Tips:

- Vegans, use margarine or Vegetable oil instead of butter and use almond milk instead of heavy cream.

Healthy Twist:

- Substitute butter with olive oil.
- Use 1/2 cup of regular milk and 1/4th cup of heavy cream instead of 1 whole cup of heavy cream.
