Kacchi Dabeli



Kacchi Dabeli [Mashed potatoes cooked with Indian spices and stuffed in dinner rolls]
This is a very popular chaat [snack] item especially in western India. I like to think of it as a 2 in 1 snack as in, its almost like Paav bhaaji but its conveniently bundled inside a bread and all ready to dig in and enjoy!! :) Also, you know those times when you look at your kitchen pantry and realize OMG I have too many potatoes and they are going bad! Well, they are not anymore, coz' you'll now make them into this awesome chaat item :)

Ingredients:

Potatoes - 2 large
Tomatoes - 2 medium finely chopped
Red onions - 1 medium finely chopped
Cumin seeds - 1 tbsp
Salt - to taste
Turmeric powder - 1sp
Dabeli masala - 2 tbsp
Red chilli powder - 1 tbsp
Sugar - 1 tbsp
Ginger garlic paste - 1 tbsp
Dinner rolls (Paav) - 6 pieces
White onions - 1 small finely chopped
Coriander leaves - for garnish
Pomegranate - 1/2 cup
Masala or salty peanuts - 1/2 cup
Sev - For garnish
Oil - 2tbsp
Butter - 2 tbsp
Tamarind chutney - as desired.

Red Chutney:
Dried Red chillies 8 whole - soaked for 15 minutes
Garlic - 6
Salt to taste
Grind these together with little water, to make the chutney.

Method:

- Boil the potatoes, mash them and keep aside
- Heat the oil in a pan and add cumin seeds and let them splutter.
- Add the onions and saute till translucent.
- Add the turmeric powder and ginger garlic paste and saute till raw smell is gone.
- Add the tomatoes and saute till they are cooked.
- Add the red chilli powder , dabeli masala, sugar and cook till the sides leave oil.
- Add salt and the mashed potatoes and mix really well.
- Now place the mashed potatoes in a rectangular serving bowl and sprinkle the pomegranates, peanuts, onions, coriander leaves and sev (in that order) evenly accorss the whole surface.
- For serving, slit the rolls/paav on 2 sides in order to make a pocket, apply the red chutney, tamarind chutney and take 2 - 3 tb sp of the potato mix or enough to fill the pocket and fill it in the rolls.
- Add some butter on a hot pan and heat the stuffed rolls on both sides.
- Dip the open sides in sev and serve!

Tips:

- You can skip the red chutney if you dont prefer spicy food.
- If some of the potato stuffing is left over, you can totally make a new dish the next day like: a Frankie or Vada Paav. Let me know if you want recipes for these dishes too!

Healthy Twist:

- Skip the butter and you can heat the rolls dry on the pan.
- Use whole wheat or multi grain dinner rolls instead of white bread.
